Al's Mocha Chocolate Chip Cookies
Every time we have a Budget Drive Committee meeting, she makes these most-delicious cookies. Posting here to share, and so I do not forget.
Pre-heat the oven to 350 F.

half-batch (makes one cookie sheet worth 4 by 6 for 24 cookies)
1 stick of butter
½ cup packed brown sugar (over is better than under)
2 tsp instant coffee
½ tsp baking soda
1 egg
1 cup flour (I often use a little bit more)
½ bag of chocolate chips
Melt the butter and mix with the brown sugar. Add the coffee, soda and egg. Mix well. Add the flour and mix. Make sure the dough isn’t too gooey. If it is, add a little more flour. Mix in chocolate chips last.
Drop spoonfuls onto a greased cookie sheet and bake for 7-9 minutes.
